Breakfast
2 eggs
1 1/2 c. rolled oats
1 c. whole wheat pastry flour (or all-purpose)
2 tsp baking powder
1/4 tsp baking soda
1 tsp pumpkin pie spice (or more)
1/2 tsp salt
1 1/2 c. buttermilk
1 c. mashed bananas (~2)
splash vanilla
8 T butter
4 tsp sugar or
2 T maple syrup
Melt butter and let cool.
Mix wets plus salt.
Mix dries.
Separate egg yolks into the wets and mix.
Beat egg whites.
Add wets to dries.
Gently fold beaten egg whites into batter.
Make waffles!
